Classic stall. Your brisket is sweating — proteins releasing moisture creates natural evaporative cooling that fights your smoker heat. This is normal. Do not panic. Do not crank the heat.
Flip's call: Wrap in unwaxed butcher paper at 170°F internal. Not foil — you'll lose the bark. Back on at 225°F. Push through to 200–203°F internal and rest 1 hour minimum. You've got this. The science is working for you, not against you.
